Fasolia bi lahme, Lebanon 🇱🇧 | Stews S1, EP 20
Welcome back to Stews from around the world, this is part 20 and today were taking a trip to Lebanon, to make a a delightful Lebanese white bean stew!
Ingredients:
1 tbsp extra virgin olive oil
1 brown onion diced
250g beef diced small
2 tsp Lebanese 7 spice
1 whole clove
1 tsp ground cinnamon
1 large tomato diced
1 tbsp black pepper
500ml beef stock
200g dry lima beans, soaked overnight
100ml passata
2 tbsp butter
1/2 cup chopped coriander
2 tbsp minced garlic
Method:
Step (1)
Heat up a large stew pot on a medium heat, then once hot, add the olive oil. Add the onion and cook for 5 minutes until soft. Then add the diced beef alongside a dash of salt to taste, then cook for a few minutes until brown all over. Now add your Lebanese 7 spice and whole cloves, then cook for a further 2 minutes.

Add your chopped fresh tomatoes, season with some black pepper then mix then cover with a lid and cook on a medium heat for 10 minutes. By now your tomatoes should have softened and a light sauce should have formed.
Step (3)
Now add the passata and beef stock then bring to a boil and cover and cook for 20 minutes. Remove the lid, taste and adjust the seasoning levels, then add your rinsed soaked lima beans then mix well, cover and cook for a further 1 hour 30 minutes until your lima beans are cooked through and your beef is soft and tender.
Step (4)
When you have about 20 minutes left on the stew, heat up a frying pan on a medium heat. Once hot, add your butter and once melted, add the minced garlic and coriander. Cook for 5 minutes on a medium low heat, then set aside.

The final step is to add garlic/butter/coriander mixture to the pan, then mix well and your good to go!
