There’s so many great things that have come from South America, but one of the best is how they cook beans. There is no place that do beans like South America.
I had these for the first time when I went to a Colombian restaurant in Spain and I remember how good they were, so I just had to recreate them!
Ingredients (4)
Soup:
200g dried rosecco/cranberry beans (soaked overnight)
1 tbsp sazon adobo
1 tsp ground cumin
1 tsp paprika
1 carrot
1 green plantain
1 shallot
3 garlic cloves
Salt to taste
Boiling water
Sofrito:
1/2 red pepper
1/2 red onion
1 green chilli
2 green onion stalk
2 garlic cloves
Method:
Step (1)
Start by placing your soaked beans in a large stew pot with enough water to cover 3 inches from the beans, then bring to a boil. Remove the scum that comes from the top, then add the ingredients for the soup. Cover and cook for 45 minutes.
Step (2)
In the meantime, make your sofrito by blending all the ingredients together, then place in a sauce pan on a medium heat and saute for 10 minutes. Now after 45 minutes remove the carrot and plantain from the broth and blend until smooth.
Step (3)
Add the sofrito and blended carrot + plantain to the to the pot and cook for a further 20 minutes, season to taste with salt and black pepper!
