Kebab Halla, Egypt 🇪🇬 | Stews S1, EP15
Welcome back to Stews from around the world, this is part 15 and today were taking a trip to Egypt, to make a Kebab Halla! A rich and sweet onion based beef stew!
Ingredients:
Serves 2:
500g stewing beef (shank, brisket etc) diced
1 tbsp vegetable oil
5 brown onions diced
3 bay leaves
2 green cardamon pods
2 tbsp black pepper
Water/beef stock
Method
Step (1)
Start by heating up a large stew pot on a medium high heat, then add 1 tbsp of vegetable oil. Once hot, add the cubed beef in batches and cook until brown all over, repeat until all pieces are well browned.
Step (2)
Now add all the diced onions to the pan, mix well and reduce the heat to a medium. Add the bay leaves, cardamon pods and black pepper then cover and allow to cook on a medium low heat for approximately 2 hours, stirring every 15/20 minutes. Add a dash of water if needed, each time you stir to ensure the stew doesn’t dry out
Step (3)
As the pot stews away, the onions will begin to release liquid and then shrink in size. By the end of the cooking the onions should have fallen apart and you will be left with a delicious and aromatic stew. Remove the bayleaves and cardamon pods and serve with fresh white rice, enjoy ;)
