Sudado de pollo, Colombia sessions 2 ๐จ๐ด
Here is a full detailed recipe for one of my all time favourite stews, the Colombian Sudado de pollo.
Over the past few years, Iโve made over 150 stews, from all over the world. And if I was to make a list of my favourite stews, this one here would enter the top 10 without a shadow of a doubt and let me show you why.
Now Iโve always loved Sudado de pollo, I used to make it all the time during my university days. It was a simple, easy and quick stew that I fell in love and continue to do so. For me, the star of this show is the cassava, as it brings such a earthy and comforting flavour that just warms my soul every time. That combined with soft tender chicken and rich tomato and cumin based sauce really is a special combination of flavours.
During my travels in Colombia, I stopped for a while in Medellin, about 6 weeks in total, why? I fell in love with salsa. I would dance all day then eat Sudado when I got back from socials and classes. This really was a special combo.
